Made these for thanksgiving and they were delicious! (I had forgotten to make the whipped cream, so they were just the little cheesecakes on their own.) The 12 mini cheese cakes were the perfect amount. As this was for Thanksgiving (with many, many pies) I was looking for several small fancy deserts to add some variety to the sweets table. Not only did these look fancy, but more importantly they also tasted great. In fact these turned out to be the main dessert attraction and I've been asked to make again for Christmas.
Besides tasting great, I also found these much easier to make than a full size cheese cake. No worries about water baths to prevent cracking etc….Frankly they are also easier to serve. Will definitely make these again.
